Slow Cooker French Dip Sandwiches – tender beef loaded with herbs and melted cheese on top of crusty hoagie rolls. Super easy to make and packed with tons of great flavor! Chuck roast, soy sauce, beef broth, beef bouillon, onion, garlic, rosemary, thyme and pepper. Serve on toasted buns with melty cheese and au jus. One bite and this is sure to become a family favorite!
Place roast in 6-qt slow cooker. Add soy sauce, beef broth, bouillon, bay leaf, garlic, onion powder, rosemary, thyme and pepper. Cover and cook on LOW for 8 hours or until very tender.
Remove roast from slow cooker, reserve broth mixture. Shred roast with two forks.
Preheat the oven broiler to HIGH. Place hoagie rolls on a baking sheet cut side up. Spread butter on the hoagie rolls. Place under the broiler and broil until toasted. Remove the top buns from the baking sheet and set aside.
Divide the shredded beef among the toasted bottom buns. Top meat with cheese slices. Place the sandwiches under the broiler until the cheese has melted. Add top buns to sandwiches.
Serve the sandwiches with the cooking juices.
Notes:
You can use any cheese that you like on the sandwiches. White American cheese, swiss cheese, and provolone cheese are my favorites.
I use beef broth in this recipe. Can substitute a can of beef consomme or French onion soup for extra flavor.

Can I freeze leftover meat? Yes! Place cooled meat in a freezer bag. Store in the freezer for up to 3 months.
Reheat in the microwave or in a large skillet over medium-high heat.
Store leftovers in an airtight container in the refrigerator.
